Showers of Blessings to Breezy & Dallon in Southern California!

They're having a girl...my niece, Breezy and her husband. Breezy is my sister Diane's daughter from http://saturdayfinds.blogspot.com/ I made this sweet keepsake box for little "Amalie" along with the softest elephant ever...and of course a "Pat the Bunny" book, a must for every chic nursery!
The little baby on the top was made from a brooch by "August Moon"
Hugs and Kisses...wish I could have been there in person.

These are a few of my favorite things!

My youngest daughter, Taryn...she always makes me laugh!
Fiestaware, Longaberger Baskets and cupcakes...what could be better!
The view of the Oregon Coast from the deck at our condo in Lincoln City.
It is simply glorious!
Ride the elevator down to the 1st floor and you step right out onto the sand!
It really is quite breathtaking. And it's only about an hour and fifteen minutes from our home.

An Easy & Delicious Monday Night Dinner!

Sometimes after the weekend it is hard to get in sync with making dinner for the family. My Oster "Rice Cooker" can also be used to cook many "One Pot " dinners! Experiment with your rice cooker and see how easy a homecooked meal can be! Grab whatever salad dressing you might have around and some spices (I used lemon-pepper) Without really measuring, dump about 1/2 cup of the dressing and maybe 2 tbl. of the spice into the cooker bowl.
Empty a bag of red, yellow and green frozen peppers into the cooker bowl too.Now add two cups of rice and 2 1/2 cups of water.
Finally add 10-12 frozen chicken tenders right out of the bag and stir it all up. That's all there is to it. Turn on the rice cooker and let it do it's work. It will automatically turn off when your meal is ready (about 30 mins.)
Voila...an instant dinner!
Of course you can use whatever kind of rice you want and any veggies you have on hand. It is so easy and quick. The variations are endless. You can leave out the salad dressing completely or add soy sauce or any other seasoning sauce.

My family loved it...and there always seems to be enough for that surprise guest that might show up at the door. Tonight it was my older daughter, Shannon! Bon Appetit!

My Twins Turn 23!

It's hard to believe that 23 years ago I was on my way to the hospital to give birth to my twin daughters, Lauren and Shannon! What a wonderful day that was! I remember it all so well...and now they have become beautiful young women that I am so proud to call my daughters!

I made them each a special "shadow box" type present for their gift....I am very pleased how they turned out! They were made with a lot of love and passion. I hope it shows!

A Weekend at the Oregon Coast!

That's me second from the left with my girlfriends!
Haystack Rock, Cannon Beach, Oregon

What a wonderful weekend I had last weekend at Women's Retreat at the Oregon Coast...Cannon Beach to be exact, "Haystack Rock". It was a great time of friendship, worship, prayer and of course food. The weather was unbelievable, sun every day and barely any wind on the beach! It was "Spring " weather for Oregon. Cannon Beach has a lovely little downtown, full of shops and cafes, which made for a perfect afternoon walk. We stayed at the Surfsand Hotel. It was simply beautiful. We were all definitely pampered with such upscale accommodations. There were home baked chocolate cookies available in the lobby each day along with milk of course. Turn down service with chocolate mints on our pillows. Saltwater Taffy and Tillamook Ice Cream....and a view of the ocean and the gorgeous sunset. I hope you will be able to experience the beauty that Oregon has to offer some day. It is worth the trip!

Puff Pastry Cream Puffs...yummm

What a sweet surprise it was to find these delicious homemade cream puffs waiting for me when I arrived at the beautiful vintage home of my dear friend, Peggy. She is always a very caring and loving hostess to our church community group as we meet at her and her husband's home each week, but this was truy an exceptional treat for us all to enjoy. I just had to share it here with you all...and Peggy gave me the recipe to share as well. It comes from the cookbook, "Sweet and Sugar free", an all natural fruit-sweetened dessert cookbook! Hope you will find the time to make these soon. Peggy provided us with a choice of vanilla pudding or peach sauce for the middle and of course whipped cream or cool whip on top! The sky's the limit!

Puff Pastry

1/2 cup butter 1 cup unbleached white flour 1 cup boiling water 4 eggs

In a medium-sized saucepan, combine butter and boiling water. Heat to a boil. Turn heat to low, add flour, and stir until mixture is thoroughly blended and a ball of dough forms. Remove from heat and allow to cool slightly. Add eggs, one at a time, and beat thoroughly after each addition with a fork until mixture forms a cohesive dough. Drop dough by rounded tablespoonfuls into a oiled baking sheet about 3" apart. Shape each cream puff with a knife into a mound that points up in the center. Bake at 400 degrees for 5 mins or until top starts to brown then reduce heat to 350 and bake 25 mins longer. Yields 25 cream puffs.

Enjoy!
